Food Storage Requirements
Now that schools are receiving commodities that are commercially labeled, the State Agency has changed the way we will look at commodities during a review of your National School Lunch Program. We will now look at your food storage practices in general, not just your commodities. We will be looking to see if all products are dated upon arrival, stored at the correct temperatures, and that the storage facilities are adequate.
It is a good business practice to date all products as they arrive so that the oldest products are used first. If you are not already doing this in your cafeteria, now is the time to start.
